Mixed Bean & Rice Salad

2 c medium grain brown rice, cooked, cooled
1 can four bean mix, drained
1 cup green beans, cooked
1/2 bunch parsley, chopped
1 punnet cherry tomatoes halved
4 Tbsp extra virgin olive oil
2 Tbsp white wine vinegar
1 Tbsp whole grain mustard
1 spanish onion, sliced
salt and peppper to taste
Place all ingredients into a large bowl. Mix together gently.
Season to taste.
Variations:
Sprinkle with some crumbled feta cheese.
