The idea for storing my most used recipes online came after a period of having my recipes and cookbooks tucked away in storage. The ease and convenience of having them available at the push of an internet button was simply to good to resist! As much as I love cooking and experimenting in the kitchen, I didn't create the majority of recipes on this site, I merely love to use them, but I'll attempt to document every recipe I know the origin of.
As a pescetarian, the selection of recipes will reflect this- but there will still be a few family recipes included from my pre-pesc years... though I aim to convert these to pesc-friendly dishes at some stage!

Anzac Biscuits (microwave)


Makes: approx 30

125g butter
1 Tbsp golden syrup
½ tsp baking soda
2 Tbsp boiling water
125g plain flour
150g rolled oats
125g castor sugar
45g dessicated coconut

Microwave the butter and golden syrup on high for 2 minutes - until butter melts.
Separately, mix baking soda with boiling water and stir into melted butter. Mix thoroughly.
Sift flour into large bowl and mix in the remaining ingredients. Make a well in the centre and stir in butter mixture to form a moist but stiff consistency.
Form teaspoon-sized balls, place on greaseproof paper and refridgerate for 30 minutes.
Place 8-9 balls in a circle, leaving 3 cm between each. Microwave on Med-High for 2½ minutes before removing.
Repeat as required.

Note to self:
The biscuits were nice but a bit too greasy. Try using less butter next time.

I was impressed with how good these turned out! I used quinoa flakes instead of oats (as I have an intolerance to oats). I also used white sugar instead of castor and palm treacle instead of golden syrup. Just to use up the ingredients I already had. And I took note to use a little less butter.
Thanks for the awesome recipe! I never would've thought I could make Anzac biscuits in the microwave 😅
