Cottee's Pancakes

Makes: 8 pancakes
Combine:
2 egg yolk
½ tsp sugar
1 cup sifted flour
¾ cup milk - add milk slowly
Beat til smooth.
Beat separately:
2 egg whites - until stiff
Stir gently to combine.
Pour batter into preheated, non-stick pan.
Cook til bubbles appear on the surface.
Turn.
Serve straight away or, store covered with foil in oven on low heat (to keep moist).
