The idea for storing my most used recipes online came after a period of having my recipes and cookbooks tucked away in storage. The ease and convenience of having them available at the push of an internet button was simply to good to resist! As much as I love cooking and experimenting in the kitchen, I didn't create the majority of recipes on this site, I merely love to use them, but I'll attempt to document every recipe I know the origin of.
As a pescetarian, the selection of recipes will reflect this- but there will still be a few family recipes included from my pre-pesc years... though I aim to convert these to pesc-friendly dishes at some stage!

Tuna, Tomato and Basil Pizza


Preparation Time: 15 minutes | Cooking Time: 20 minutes | Serves: Makes 1 x 20cm pizza


Yeast free Dough
1½ cups plain flour
1 Tbsp baking powder
½ tsp salt
½ cup water
2 Tbsp olive oil


Topping
1 x 185g can tuna with tomato and basil
2 Tbsp tomato chutney
½ cup red and green capsicum
8 whole black olives
½ cup feta cheese (cubed)
½ cup red onion
½ cup grated mozzarella cheese
4 fresh basil leaves

Combine all the dough ingredients in a food processor until they make a ball (if a little dry add more water).
Grease a 20cm pizza tin.
Roll out dough with a rolling pin on a floured surface, keeping as round as possible to fit pizza pan.
Place in pizza pan.
Spread with tomato chutney, red onion, capsicum, feta and olives. Place tomato and basil tuna on top sprinkle with mozarella.
Bake on 190ºC for approx 20-25 minutes or until cheese has browned. Serve with fresh basil leaves.
