The idea for storing my most used recipes online came after a period of having my recipes and cookbooks tucked away in storage. The ease and convenience of having them available at the push of an internet button was simply to good to resist! As much as I love cooking and experimenting in the kitchen, I didn't create the majority of recipes on this site, I merely love to use them, but I'll attempt to document every recipe I know the origin of.
As a pescetarian, the selection of recipes will reflect this- but there will still be a few family recipes included from my pre-pesc years... though I aim to convert these to pesc-friendly dishes at some stage!

Shayce's Quick-N-Easy Vegetarian Nachos


Oil (for cooking)  
Onion 
Curry powder 
Other seasonings: salt and pepper, and whatever's on hand. (Tuscan is good, so is Cajun, Paprika etc.. use whatever you want)

½ - 1 tin mushrooms
1 tin seasoned tomatoes
½ - 1 tin baked beans
1 tin either red kidney beans or chilly beans

Frozen vegies (I prefer the stir-fry type mixes better. Watti's Romani in particular for this recipe)

Corn chips
Grated cheese
Sour cream (optional) 

Heat the oil in the pot and add the onions which have been chopped to your preference. I prefer the larger wedges, some prefer diced really fine. Up to you.
Add your seasonings, including the curry powder. Keep mixing.

Add the mushrooms. Keep stirring it around until the sauce has dehydrated a fair bit.
Add the seasoned tomatoes, then the baked beans and red kidney beans or chilly beans.
Add more seasonings if required to taste, then heat through.

Once boiling, add the frozen vegies, then wait til reboiling.
Cover and simmer, stirring occasionally, until the flavour has soaked through.

Once ready, place the corn chips on the plates.
Scoop the nacho mix on top of the corn chips, then sprinkle grated cheese over the top.
Place the (oven-safe) plates under the grill until the cheese melts, or, more easier, place each plate in the microwave until the cheese melts.
Place a dollop of sour cream on top in the middle if desired, then tuck in and enjoy.
