The idea for storing my most used recipes online came after a period of having my recipes and cookbooks tucked away in storage. The ease and convenience of having them available at the push of an internet button was simply to good to resist! As much as I love cooking and experimenting in the kitchen, I didn't create the majority of recipes on this site, I merely love to use them, but I'll attempt to document every recipe I know the origin of.
As a pescetarian, the selection of recipes will reflect this- but there will still be a few family recipes included from my pre-pesc years... though I aim to convert these to pesc-friendly dishes at some stage!

Mum's Chocolate Peppermint Slice


 cup SR flour
2 Tbsp cocoa
¼ tsp bicarb
½ c castor sugar
30g butter
⅓ c water
1 egg


Peppermint Filling
2¼ c icing sugar
1 tbs oil
2 tbs milk (approx)
peppermint essence


Chocolate Topping
125g dark choc, chopped
90g unsalted butter

Grease 25 x 30cm Swiss roll pan (nonstick) or line with greased paper.
Sift flour, cocoa & soda into small bowl, add sugar, butter & water - beat on medium speed for 2 mins.
Add egg - beat until combined.
Into pan - bake in moderate over for 20 mins - cool.

Filling - combine sifted icing sugar & oil in small heatproof bowl.
Stir in enough milk to make a stiff paste.
Flavour with essence.
Stir over hot water until spreadable.

Spread base with filling - refrigerate.

Topping - melt chocolate & butter over hot water.

Spread filled base with topping - refrigerate until setting, cut into slices - refrigerate until set.
