Potato Bread

2 c self-raising flour
1/2 c sugar
1 c currants
1/2 c mashed potato
1/2 c milk
Sift the flour into a bowl, mix in the potato, sugar and currants.
Mix to a soft dough with the milk, knead lightly on a floured surface and form into a round mound.
Glaze with milk and place on a floured tray.
Bake in a moderate oven (about 180C) for about 25minutes or until cooked and golden brown!
You could ice it or have it plain.
